HEALTHY BANANA CAKE WITH 6 INGREDIENTS! (SUGAR-FREE, LACTOSE-FREE, WHOLE WHEAT, VEGAN)
Yes, you read right! This banana cake is super moist, does not take wheat, refined flour, eggs, milk or sugar ... and is DELICIOUS! Are you doubting? Come see the recipe, test it at home and then you can tell me what you thought!
I am very proud of this banana cake! Not only because it is super moist and fluffy, gluten free, sugar free, milk and egg free, but because this simple cake represents a lot of the Fru-fruta philosophy. 🍌 It's a super healthy recipe that works for most dietary restrictions and above all: EASY to make and CHEAP!
Ingredients:
3/4 cup whipped ripe bananas (approx. 3 units of plantains) + 1 banana for decoration
1 and 1/2 cups oatmeal
15 pitted dates or 1/2 cup raisins (mash them well in the measuring cup)
3 Tbsp lemon juice (approx. 2 pcs.)
1/2 Tbsp baking soda
1/2 Tbsp baking powder
1 Tbsp cinnamon powder (optional)
1/2 cup coconut milk (the industrialized kind, which has more fat)
1/4 cup water
Instructions
Preheat the oven to 180ºC and grease an English cake pan.
In a blender or processor, beat the bananas and measure out 3/4 cup. Return the banana cream to the processor, add the dates (or raisins), milk, lemon and water and blend until smooth.
In a medium bowl, add the dry ingredients, baking soda, and baking powder and mix together.
Cut the banana that you will use to decorate in the way you prefer.
Pour the liquids over the dry ingredients and mix with the help of a spatula with bottom up movements. The bicarbonate will begin to react with the lemon and the dough will begin to rise.
Pour into the greased baking pan and decorate with the banana in the way you prefer.
Bake for 50 to 60 minutes, until the cake has a light brown color. Stick a toothpick in the center of the dough, it should come out dry. It's done!
Wait for the cake to cool down (or at least warm up well) to unmold.
Notes The ingredients must be at room temperature (like almost any cake)! Co-create this recipe: you can sprinkle chopped nuts, seeds or chopped chocolate. For sure it will be delicious! If you want to use homemade coconut milk, replace the 1/4 cup of water with more milk (total of 3/4 cup of homemade milk). You can also substitute cashew nut or peanut milk. Since the dough is very moist, store in the refrigerator.
